                  高庙白酒制作工艺，沿袭传统古法。以优质高粱作原料，经过泡粮、蒸煮、拌曲药醣化、摊凉发酵、蒸馏取酒等多个工序，方出原浆。古老的作坊里，蒸气弥漫，酿酒工来往穿梭，满屋酒醩香。其制作工艺，独具特色。一是制酒器具全部采用古老的木质设备。蒸煮粮食用的是木甄，糖化箱是木箱，发酵池是圆木桶池，蒸馏酒也是用的木甄，盛装器具也全部是木制品。二是在夜里12点以后酿制。此时空气最为洁净，气温最低。三是土法窖藏。酿出来的酒，以土陶坛盛装，埋入一米多的地下，用本地特殊粘土作窖泥封口，窖藏陈酿半年以上，让白酒在适宜的温度和湿度环境下呼吸、软化、增香，达到醇香、温和、清爽的口感。
